Mocha Girl Cooks: Super Easy Candied Yams Recipe Terri Lomax November 22, 2015 My family’s from the south and candied yams (or candied sweets/ candied sweet potatoes) is a popular holiday dish for us. My grandmother typically doesn’t use marshmallows but I topped my candied yams dish with mini marshmallows last year and I fell in love. Enjoy this super easy candied yams recipe! Easy Candied Yams Recipe Ingredients: 5 medium sweet potatoes 1 16 oz. bag mini marshmallows (you’ll have plenty left over to snack on) 3 cups white sugar 3 teaspoons cinnamon 9 teaspoons vanilla flavoring 6 tablespoons butter Directions: Preheat oven to 400 degrees. Grease a 9 X 13 inch baking dish Bring a large pot of water to a boil. Add sweet potatoes and boil until almost tender (you don’t want them to be too soft), about 45 minutes. Drain, cool and peel Cut each potato half lengthwise into fourths (like this) Cover the bottom of the baking dish with one layer of potatoes Pour 1 cup of white sugar evenly over the layer of sliced potatoes Sprinkle 1 teaspoon of cinnamon evenly over sugar and potatoes Pour 3 teaspoons of vanilla flavoring over 1st layer Cut 6 teaspoons of butter and place them around the perimeter of the first layer Repeat steps 4-8 and leave about 2 inches from the rim and the last layer Cover dish with foil and bake for 1 hour or until potatoes are “candied.” Remove dish and cover with mini marshmallows.
